Connect the iPad to the Mac via a USB. After that, close the iTunes. Then open up the “Utility” folder and then launch “Terminal”. Type the command “defaults write com.apple.iTunes DeviceBackupsDisabled -bool true” on the terminal. Then press on the enter button. This will disable the process of backup completely. In case if you want the backup to be enabled just enter the comment “defaults write com.apple.iTunes DeviceBackupsDisabled -bool false” on the terminal. This will turn the backup ON.

:: Open the terminal window from it.
:: Now here you type in the command
“defaults write com.apple.iTunes DeviceBackups Disabled -bool true”.
:: And then press enter.

permanently disabled.

For disable the backup permanently in ipad device you need to follow the below mentioned procedure
+++ Steps to follow to disable the backup process in ipad permanently :
1. First of all connect the ipad device to mac using the usb cable.
2. Close the iTunes and go to the utility option.
3. In utility again find and tap the terminal option.
4. Now you will see the small empty space to enter the command.Here enter the command """ defaults write com.apple.iTunes DeviceBackupsDisabled -bool true """.
5. After enter command press the enter button.
6. After pressing your backup option in ipad is disabled completely.
